KEROVANI is a small family-owned winery where wines are produced in Qvevris using centuries-old Georgian traditional technology. Kerovani means a shining candle that would lighten the family's home in old times. In a similar way as the family hearth relates to the family and its values, the Kerovani Winery focuses on values related to winemaking, vines and guest hospitality.

Kerovani Winery follows the conception of natural winemaking implying bioorganic viticulture and winemaking.

Fermentation of wines continue in Qvevris of the winery the natural way by centuries-old Georgian traditional method of winemaking, which is acknowledged by UNESCO as world's intangible heritage. We take a diligent and special attitude approach to each process in the winery to get a high quality final product, distinguished by its taste and aromatic properties.

Petillant Naturel

This sparkling wine from Rkatsiteli grape is made by Artisanal Method - the oldest known technique of making sparklig wines. We bottle incomplitely fermented juice allowing it to get fully fermented in the bottle. The bottles then are cellared in an upside down position for a year. Finally, we freeze lees in the neck of the bottles, disgorge the wine and recap the bottles. This is how we get clear natural sparkling wine.

Kesane - Forget me not

Kesane is a flower commonly known as Forget-me-not (scientific name - Myosotis). Our vineyards have plenty of them. This Naturel wine made from Rkatsiteli grape is fermented without skin contact and is characterized with slightly sweet taste.

This natural wine from Rkatsiteli grape is made by Kakhetian method. Fully crashed grapes are fermented in Qvevri. When fermentation is over Qvevri gets sealed and the young wine is left there for a six-month gravity filtration. In the spring time young wine gets separated from the must and lees and is stored for bottling.

This natural wine made from Rkatsiteli grape comes from our hillside vineyard. Crashed grapes are fermented in Qvevri for a month and then the juice is separated from the lees and must and sealed in Qvevri for further aging and bottling.

Field Blend

This natural wine based on four different white grapes is made by Kakhetian method. Fully crashed grapes are fermented in Qvevri. When fermentation is over Qvevri gets sealed and wine is left there for the next six-month gravity filtration. In the spring time the young wine is separated from the must and lees and stored for bottling.
